The Chef’s Philosophy
“I came to cooking slowly, and I cook slowly.”
Aiko Mori trained for seventeen years — first in Kanazawa, then under a master of washoku in Kyoto, and finally at a small farmhouse in Hokkaido where she learned to read the season in a single leaf. She opened NOCTURNE in 2019 with a counter of eight seats and a single rule: nothing leaves the kitchen that does not deserve the quiet of the room.

Four ingredients lead the kitchen this autumn — each is named on the menu, traced to its origin, and prepared in the way the season asks for it.

A Room of One’s Own
Beyond the counter, a small private room lined in hinoki cypress — a table of six, a single candle, and a menu composed entirely for the people in the room. Available for celebrations, working dinners, or the rare night that calls for it.
